  • 2 cups of cooked and shredded chicken
  • A pinch of nutmeg

  1. Beat the egg whites until they form stiff peaks.
  2. In a separate bowl, beat the egg yolks with cream cheese, milk, parmesan, and seasonings.
  3. Mix in the cooked and mashed sweet potatoes.
  4. Gently fold the egg whites into the mixture.
  5. Add the shredded chicken and stir until well combined.
  6. Pour the mixture into a greased baking dish and sprinkle with oat bran.
  7. Bake at 200 degrees Celsius for 45 minutes or until firm and golden brown.
  8. Serve and enjoy!

Recipe for Sweet Potato Fit Pie

Ingredients:

  • 4 peeled and cubed sweet potatoes
  • 1 cup of grated light parmesan cheese
  • 1/2 cup of light cream
  • 1 medium-sized egg
  • 6 slices of light mozzarella cheese
  • Cherry tomatoes
  • Black pepper to taste
  • Fresh basil leaves
  • Salt to taste

Instructions:

  1. Cook the sweet potato cubes until soft, then drain and let them cool.
  2. Preheat the oven to 200 degrees Celsius.
  3. In a blender, mix the sweet potatoes with the egg, cream, grated cheese, onion, salt, and pepper.
  4. Grease a baking dish and pour half of the mixture into it.
  5. Add the mozzarella slices and cover with the remaining mixture.
  6. Top with cherry tomatoes and garnish with basil leaves.
  7. Drizzle with olive oil and bake for about 40 minutes or until firm.
  8. Serve and enjoy!
